Salt Farming

A cultural treasure is preserved here: traditional “Jayeom” (자염) Salt Farming, a rare and complex method of boiling seawater in stone salt kilns to produce bright white, pure salt. This technique has been passed down since the 18th century, though it remains unknown to many Koreans.

The uniqueness of this salt lies in its harvesting from the seabed mudflats of Taean, which remain drained for seven days, allowing the soil to dry perfectly and crystallize the salt. This ancient method preserves many minerals, producing a salt with a milder taste and delicate texture, distinct from commercial salt.

Since 2001, after a long decline, this tradition has revived thanks to the restoration of the tidal flats. Taean’s jayeom salt is now recognized for its exceptional quality and costs roughly 60 times more than regular salt in Korea.
